White Peony Price: 11.00 California Tea House White Peony, also known as Pai Mu Tan, is a close cousin to Silver Needle. White Peony uses the young, unopened buds of the tea plant as well as the center needle sprout. After a natural aging and withering process, White Peony produces a fuller flavor and greater potency than Silver Needle. Brewing brings out a mild peony, floral aroma.  White Peony is best brewed with 2 heaping teaspoons per cup in quaility mineral or spring water at 70°C to 80°C (158°F to 176°F) and steep for 3 to 5 minutes or to taste.

Moroccan Mint Price: 12.00 California Tea House This is our famous Gunpowder green tea with a twist. Inspired by a trip to Morocco where almost all tea is drank with the addition of mint leaves, we added fresh spearmint to our delicious gunpowder green tea to create our very refreshing Moroccan Mint green tea. Gunpowder tea production started with the Tang Dynasty. Gunpowder tea leaves are naturally withered, steamed, rolled, and then dried. California Tea House's high grade Gunpowder are still rolled by hand into small tight balls that make the tea leaves less susceptible to damage, allowing them to retain more of their flavor and aroma. Use 1 even teaspoon of gunpowder tea for each cup of mineral water. Steep the tea for 1 to 2 minutes at about 180oF.

Organic Lapsang Souchong Price: 4.00 California Tea House Organic Lapsang Souchong, from the Wuyi region of the Fujian province of China, is the single malt scotch and fine cigar lovers tea of California Tea House. It has an amazing smoky flavor and aroma due to its drying process. This special grade, Organic Lapsang Souchong is smoke-dried using only Wuyi local pine wood. This is one of our unique favorites that is sure to find a following as we open up our collection. Just as cigar smokers favor either a light leaf or dark leaf wrapper, you will find your own perfect steep time somewhere between 3 to 5 minutes (longer for a darker effect). Use 1 teaspoon of tea per cup in filtered or spring water at just below boiling water.

Yunnan Golden Buds Price: 16.00 California Tea House California Tea House's collection of Yunnan Golden Buds, or Dian hong, is also known as 'Yunnan Pure Gold' in China as it is considered the very finest of Dian hong tea. It contains only pure golden tips, covered in 'tea down.'  What separates our Yunnan tea from the crowd is the high amount of fine leaf buds, or "golden tips." Use 1 heaping teaspoon of Golden Buds per cup. Let your mineral or filtered water come down just below a full boil before steeping from 2 to 3 minutes. Some tea connoisseurs will say a tea this fine should only be drank out of Yixing clay, or Chinese traditional cups. We usually have ours in regular tea cups and even infuse the leaves more than once. You sometimes get the best flavor on the second infusion.Â

Buddha Hand Price: 5.00 California Tea House Buddha Hand Oolong gets its name from the large, hand like leaves of 'Citron' tea variety from which it is derived and the Buddhist monks that first cultivated it for ceremonial teas. We like Buddha Hand for its thick, smooth taste and lively aroma. Buddha Hand is a great soother and like our other Oolongs it is wonderful through 2 or even 3 infusions. Use 2 teaspoons of Buddha Hand to every one cup of just under boiling mineral or filtered water. The steep time for each infusion should be kept to 4 to 5 minutes.Â

Organic Silver Needle Price: 6.00 California Tea House Organic Silver Needle is the ‘High Society’ white tea from the Fuding and Zhenhe districts of the Fujian province of China, also known as Bai Hao Yinzhen. California Tea House only carries the top buds available of its kind. This premier tea is picked between March 15 and April 10 when it is not raining, only using undamaged and unopened buds and governed by strict requirements to ensure you are receiving only the finest tea available. Organic Silver Needle has a sweet, clean taste and is the Pinot Noir of teas as it is appreciated by the sophisticated pallet of seasoned tea connoisseurs. This tea is best prepared with 1 teaspoon per cup of below boiling water as it is a delicate tea, but you may use a longer steep time than most white teas; up to 3-5 minutes, or to preference.

Marmalade Pu-Erh Price: 17.00 California Tea House If you are a Pu 'erh fan, our new Marmalade Pu-Erh is going to be your new favorite.  Think old school musky flavor with a touch of sweet and very mild bitters that preserved orange zest can bring to the table, and I think you'll agree - we hit the nail on the head with this one. If you're new to Pu 'erh, I recommend you start with a very pure Pu 'erh like our Bird's Nest and then try this Marmalade version so you will understand the flavor layers in each cup. This tea has an amazing aroma as well! Use 1 teaspoon of Marmalade Pu-Erh to each cup of filtered or spring water at a full boil and steep for 5-8 minutes, although, steeping Pu 'Erh for longer won't stress the flavor of the tea, you could bruise the flavor of the orange preserves.
